and am therefore channeling my inner "Southern Belle", but I have decided to do trays of baked goods as Christmas gifts for my local friends.
I plan to make our family favorite~ Cream Cheese Brownies~ but I need some other ideas.
That's where y'all come in.
I need any easy, tasty, fool-proof cookie or candy recipes that y'all are willing to share.
So c'mon, all you Martha Stewarts out there!

Well, I ain't no cook but it should be something with peanut butter. All us southerners love us some peanut butter.

ReplyDelete... but I hear a reefer mixed in with a brownie is a real winner at the family dinner table (would Roseanne approve?), although I've never had one.
Oh, yes, I wouldn't recommend reading my blog entry from yesterday if you're trying to work up an appetite.
How about peanut butter balls (aka Buckeyes)? I have lots of cookie recipes but none are easy and I'm staying away from the cookbooks right now.

ReplyDeleteDo the no bake cookies! And you can always do green sprinkled sugar cookies shaped like X-mas trees as filler. Sugar cookies are the baby's breath of the cookie community, right?
ReplyDeleteI wouldn't deal with candy- we don't make candy??? Toss in some peppermints or candycanes, the baby's breath of the candy community... :) I'm generic...
Coconut Macaroons
ReplyDelete14 oz sweetened, shredded coconut
14 oz. sweetened condensed milk
1 tsp vanilla
2 room temperature extra large egg whites
¼ tsp kosher salt
Preheat the oven to 325 degrees F.
Combine the coconut, condensed milk, and vanilla in a large bowl. Whip the egg whites and salt on high speed in the bowl of an electric mixer fitted with the whisk attachment until they make medium-firm peaks. Carefully fold the egg whites into the coconut mixture.
Drop the batter onto sheet pans lined with parchment paper using either a 1 3/4-inch diameter ice cream scoop, or two teaspoons. Bake for 25 to 30 minutes, until golden brown. Cool and serve.
Gooey Butter Cookies-

8 ounces cream cheese- softened
1/2 cup real butter, softened
1 egg
1/4 teaspoon pure vanilla extract
1 18.5-ounce package yellow butter cake mix
1/4 cup powdered sugar
Preheat oven to 350 F. In a medium bowl, cream together the cream cheese and butter. Stir in the egg and vanilla. Add cake mix, and stir until well blended. Roll into 1" balls and then roll the balls in the powdered sugar. Place 1 inch apart onto an ungreased cookie sheet, preferably on PARCHMENT PAPER.
Bake for 10 to 13 minutes. DO NOT OVER BAKE. Until JUST starting to brown. Supposed to be a bit "gooey" on the inside. Remove from baking sheets to cool on wire racks.
Both easy.

Peanut butter cookies with white chocolate recess peanut butter cups on top. Don't have time to send you the recipe, so just use Pillsbury's peanut butter cookie dough and slap a white chocolate recess peanut butter cup on top.

1/2 cup shortening
1/2 cup peanut butter
1/2 cup granulated sugar
1/2 cup packed brown sugar
1 teaspoon baking powder
1/8 teaspoon baking soda
1 egg
2 tablespoons milk
1 teaspoon vanilla
1-3/4 cup all-purpose flour
1/4 cup granulated sugar
54 milk chocolate kisses or stars
1. In a large mixing bowl beat the shortening and peanut butter with an electric mixer on medium speed 30 seconds. Add the 1/2 cup granulated sugar, brown sugar, baking powder, and baking soda. Beat until combined, scraping the sides of bowl. Beat in egg, milk, and vanilla until combined. Beat in as much of the flour as you can with the mixer. Stir in any remaining flour.
2. Shape dough into 1-inch balls. Roll the balls in the 1/4 cup granulated sugar. Place 2 inches apart on an ungreased cookie sheet. Bake in a 350 degree F oven 10 to 12 minutes or until edges are firm and bottoms are lightly browned. Immediately press a chocolate kiss into each cookie's center. Transfer cookies to a wire rack; let cool. Makes about 54 cookies.

ReplyDeleteI am not huge in baking. But I make awesome brownies! I use Betty Crocker Supreme brownie mix. And I drop Reeses popables in after I spread the mix in the pan. Or I sometimes make them in muffin pans and use the mimi Reese cups. 28 min in a pan, 14 for muffins at 350

ReplyDeleteCornflake Wreath Cookies
1/2 cup butter
3 cups miniature marshmallows
1/2 tsp almond extract
1/2 tsp vanilla extract
1 tsp green food color
4 cups corn flakes
red hot candies
silver dragées
Melt butter, add marshmallows, stirring until all marshmallows are melted. Add extracts and food coloring; stir until it is a uniform green color. When mixture is smooth, add corn flakes; mix well but gently so as not to crush the cornflakes. Form into wreath shapes on sheets of waxed paper, decorate with red cinnamon candies and silver dragées. Let cool.
PS I don't know what dragees are, my mom and me and my brother only used the red hots on the wreaths.
Candy Cane Cookies
1 cup butter or margarine
1 cup sifted confectioners sugar
1 egg
1-1/2 teaspoon almond flavoring OR 3/4 teaspoon peppermint flavoring
1 teaspoon vanilla extract
2 1/2 cups all purpose flour
1 teaspoon salt
1/2 cup crushed peppermint candy
1/2 cup white sugar
Preheat oven to 375 F. Mix butter sugar, egg, and flavorings thoroughly. Add flour and salt, Mix well. Shape dough into a disk and wrap with plastic wrap; chill for at least 2 hours or until easy to handle. Roll into 4 inch strips; place on baking sheet. Curve top down to form handle or cane. Bake 9 minutes. While still warm, remove from pan and sprinkle with candy and sugar mixture.
Dough may be divided in half and colored with 1/2 teaspoon red food coloring if desired. Roll each color into strips, place side by side, press together lightly and twist like a rope.
the only kind I make are chocolate chip....I buy the rest....lol...but I can tell you where some good bakeries are....lmao
